Pride donuts for pride weekend!

Chocolate donuts on the breakfast table in 30 minutes?!?! You need to try these baked chocolate donuts with chocolate glaze made from any of our cocoa mixes. We will be eating these on our way to the parade on Sunday! Happy Pride from Seattle!

Makes 6-8 full size donuts

Donut ingredients:

  •     3/4 cup flour
  •     1/2 cup Intrigue's Mint cocoa mix (any flavor will work)
  •     1 teaspoon baking soda
  •     pinch of salt
  •     1 egg
  •     1/4 cup brown sugar
  •     1/3 cup white sugar
  •     1/4 cup milk or dairy of choice
  •     1/3 cup sour cream
  •     3 tablespoons melted butter
  •     1/2 teaspoon vanilla extract


Directions:

  •     Oil or spray your donut pan and set aside.
  •     Preheat your oven to 350F.
  •     In a medium sized bowl, add egg and both sugars. Whisk until pale and frothy.
  •     Add milk, sour cream, butter, and vanilla and whisk until completely combined.
  •     Sift flour and baking soda directly on top of wet mixture.
  •     Add cocoa mix and salt to the bowl.
  •     Fold in the dry ingredients until just combined; the batter will be thick.
  •     Add batter to a piping bag or sandwich bag.
  •     Pipe batter into the donut cavities in your pan; fill halfway.
  •     Bake for 14-16 minutes. Check with a toothpick at 14 minutes. If it comes out clean, you are good to go!
  •     Cool completely before adding glaze.


Glaze Ingredients:

  •     1/4 cup Intrigue's Mint cocoa mix  (any flavor cocoa mix will work)
  •     3 tablespoons of hot water
  •     1 Tablespoon corn syrup
  •     1 1/2 cups powdered sugar, sifted


Directions:

  •     In a small bowl, add cocoa mix and hot water- mix until combined and most sugar crystals have dissolved.
  •     Add corn syrup - stir to combine
  •     Add powdered sugar in small batches - mix with a whisk. Keep adding powdered sugar until you reach the right consistency. (It should look like melted chocolate.)
  •     Dip donuts quickly and add sprinkle before the  glaze starts to dry.



Pro tip-

You can make glaze and donuts the day before. Keep donuts in an airtight container on your counter. Keep glaze in the fridge and cover. When ready to use, gently warm the glaze in the microwave - stir before dipping.
